Ingredients

  • 10 medium or large perch
  • 1 tsp. salt
  • 1/2 c. water
  • 1 c. white vinegar
  • 1 1/2 Tbsp. pickling spice
  • 1 medium sliced onion

Instructions

  1. Fillet the perch into 2 to 3 pieces.
  2. Put the fish in a colander and steam for 10 minutes over boiling water.
  3. Bring water, vinegar, salt, pickling spice, and sliced onion to a boil to make the pickling solution.
  4. Pour the hot pickling solution over the steamed fish.
  5. Transfer the fish and pickling liquid into jars.
  6. Allow the jars to cool and set the fish in the solution overnight.
  7. The longer the fish remains in the pickling solution, the better they taste.
