Ingredients

  • 1 to 4 lb. salmon pieces
  • 3/4 c. salt
  • 1 lb. brown sugar
  • 2 c. vinegar
  • 1 c. water
  • 2 Tbsp. brown sugar
  • 3 bay leaves
  • 1 Tbsp. cloves
  • 1 Tbsp. celery seed

Instructions

  1. Put salmon pieces in a crock or large bowl with layers of 3/4 cup salt and 1 pound brown sugar, skin side up.
  2. Carefully cut bones off of the meat.
  3. Leave the salmon in the crock for at least 3 days to cure.
