  1. Mix together flour, eggs, and milk to make a soft dough. Add 1/4 cup water if needed.
  2. On a well-floured surface, roll out the dough to 1/8-inch thickness.
  3. Cut the dough into squares.
  4. Fill each square with sauerkraut, mashed potatoes, cottage cheese, or your favorite cheese, folding as for a turnover.
  5. Drop the filled dough into boiling water and cook for 15 minutes, stirring with a wooden spoon.
  6. Drain the pierogis.
  7. Saute onions in butter until golden.
  8. Add the drained pierogis to the skillet with onions and butter, and heat through until browned.
  9. Serve topped with shredded cheese.
