Ingredients

  • nonstick vegetable cooking spray
  • 2/3 cup yellow cornmeal
  • 6 tablespoons all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 egg whites
  • 2/3 cup buttermilk
  • 2 tablespoons vegetable oil

Instructions

  1. Spray an 8 x 1 1/2-inch nonstick round cake pan with cooking spray.
  2. Stir together cornmeal, flour, and baking powder in a medium bowl until well mixed.
  3. Lightly beat egg whites in a small bowl.
  4. Stir in buttermilk and oil until well combined.
  5. Pour the liquid ingredients all at once into the dry ingredients and stir briskly with a fork until just evenly moistened; do not overstir.
  6. Turn the batter into the prepared pan.
  7. Bake at 400°F (200°C) for 18 to 20 minutes or until a wooden pick inserted comes out clean.
  8. Turn out onto a wire rack to cool slightly.
