Ingredients

  • 3 1/3 cups Softasilk cake flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 3 eggs
  • 4 medium ripe bananas
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla
  • 1 (8 oz.) can crushed pineapple with juice

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour three 9-inch round cake pans with 1 1/2-inch sides.
  3. Mix cake flour, sugar, baking soda, salt, and cinnamon in a large bowl.
  4. Add vegetable oil and slightly beaten eggs to the dry ingredients.
  5. Stir until all dry ingredients are moistened; do not beat.
  6. Stir in chopped bananas, 1 cup chopped pecans, vanilla, and crushed pineapple with juice.
  7. Divide batter evenly among the prepared pans.
  8. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes, then remove from pans.
  10. Cool completely on wire racks.
  11. Fill each layer and frost the top and sides of the cake with cream cheese frosting.
  12. Sprinkle 1/2 cup chopped pecans on top of the cake.
  13. Cut the cake with a sharp knife.
  14. Refrigerate any remaining cake.
