- Halve the hens lengthwise and remove the backbones.
- In a large shallow dish, combine 1/4 cup pineapple juice with the remaining ingredients (pineapple with juice, catsup, vegetable oil, lemon juice, Worcestershire sauce, chopped onion, minced garlic, salt, and pepper).
- Pour the marinade over the hens and refrigerate for at least two hours.
- Grill or broil the hens according to the Cornish hen package directions.
