Pineapple Barbecued Hens

Ingredients

  • 1 package Perdue Cornish Hens
  • 1 can (8 oz) sliced pineapple with juice
  • 1/4 cup catsup
  • 1 tablespoon vegetable oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon chopped onion
  • 1 clove garlic
  • Salt and pepper

Instructions

  1. Halve the hens lengthwise and remove the backbones.
  2. In a large shallow dish, combine 1/4 cup pineapple juice with the remaining ingredients (pineapple with juice, catsup, vegetable oil, lemon juice, Worcestershire sauce, chopped onion, minced garlic, salt, and pepper).
  3. Pour the marinade over the hens and refrigerate for at least two hours.
  4. Grill or broil the hens according to the Cornish hen package directions.
