Ingredients

  • 14 oz. can crushed pineapple
  • 1 cup coconut
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 1 stick oleo
  • 2 eggs
  • dash of ginger

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 15 x 10 x 2-inch jelly roll pan. Mix 3/4 cup undrained crushed pineapple with coconut and set aside.
  3. Work shortening until soft.
  4. Add sugar and beat until mixture is creamy. Add eggs one at a time, beating well after each addition.
  5. Alternately stir in dry ingredients (flour, baking powder, soda, salt) with remaining pineapple and juice.
  6. Pour batter into prepared pan and sprinkle with pineapple topping mixture.
  7. Bake for about 25 to 30 minutes or until the cake pulls away from sides of the pan.
