Ingredients

  • 1 (20 oz.) can pineapple chunks
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. sugar
  • 1 1/4 cups shredded Cheddar cheese
  • 1 1/2 cups crushed Ritz crackers
  • 3 Tbsp. butter

Instructions

  1. Preheat oven to 350°F.
  2. Drain the pineapple, reserving 3 tablespoons of juice.
  3. Arrange the pineapple on the bottom of a greased 1 1/2 quart baking dish.
  4. Combine the flour and sugar; sprinkle over the pineapple.
  5. Drizzle the reserved pineapple juice on top.
  6. Sprinkle with shredded Cheddar cheese.
  7. Combine the crushed Ritz crackers and melted butter; sprinkle over the cheese.
  8. Bake, covered, for 15 minutes.
  9. Uncover and bake for an additional 10 minutes.
