Ingredients

  • 1 pineapple
  • 1 cup strawberries, cut in half, with 4 whole strawberries reserved
  • 1 cup cantaloupe balls
  • 8 oz cheddar cheese, cubed into 1/2 inch cubes
  • 1/4 teaspoon ground ginger
  • 2 tablespoons lime juice
  • 2 tablespoons chopped almonds
  • pineapple yogurt

Instructions

  1. Cut pineapple lengthwise into quarters through the green top.
  2. Cut along the edges of the quarters to remove the fruit.
  3. Cut the pineapple core off the fruit, then cut the fruit into bite-sized pieces.
  4. Place pineapple chunks, halved strawberries, and cantaloupe balls into a large bowl.
  5. Sprinkle with ground ginger and lime juice, then toss to combine.
  6. Stir in the cubed cheddar cheese.
  7. Spoon the fruit mixture into the pineapple shells.
  8. Sprinkle with chopped almonds.
  9. Spoon pineapple yogurt onto each serving and garnish with whole strawberries.
