- Dissolve the lemon jello in boiling water and set aside to thicken.
- Add 1/4 cup sugar, lemon juice, crushed pineapple, and salt to slightly beaten egg yolks, then cook over boiling water until custard-like.
- In a separate bowl, beat egg whites until stiff, gradually adding 1/4 cup sugar.
- Whip the cream until soft peaks form.
- Once the jello thickens, beat it with an egg beater and add the custard mixture.
- Fold in the beaten egg whites and whipped cream gently.
- Line the bottom of an 8 x 12-inch pan with crisp wafers or graham crackers.
- Save a tablespoon of crushed wafers to sprinkle on top.
- Pour the mixture into the pan, sprinkle with reserved wafers, and refrigerate several hours until set.
