Ingredients

  • 3 oz. lemon jello
  • 1 1/2 cups boiling water
  • 4 eggs, separated
  • 1 cup crushed pineapple
  • 1/2 cup sugar
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1 cup cream, whipped

Instructions

  1. Dissolve the lemon jello in boiling water and set aside to thicken.
  2. Add 1/4 cup sugar, lemon juice, crushed pineapple, and salt to slightly beaten egg yolks, then cook over boiling water until custard-like.
  3. In a separate bowl, beat egg whites until stiff, gradually adding 1/4 cup sugar.
  4. Whip the cream until soft peaks form.
  5. Once the jello thickens, beat it with an egg beater and add the custard mixture.
  6. Fold in the beaten egg whites and whipped cream gently.
  7. Line the bottom of an 8 x 12-inch pan with crisp wafers or graham crackers.
  8. Save a tablespoon of crushed wafers to sprinkle on top.
  9. Pour the mixture into the pan, sprinkle with reserved wafers, and refrigerate several hours until set.
