Ingredients

  • 2 pkg. raspberry gelatin
  • 1 1/2 c. boiling water
  • 1 (20 oz.) can crushed pineapple (undrained)
  • 1 (1 lb.) can whole cranberry sauce
  • 1/2 c. Port wine or fruit juice
  • 1 c. chopped pecans
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. dairy sour cream

Instructions

  1. In a 9-inch square pan, dissolve gelatin in boiling water.
  2. Stir in crushed pineapple, cranberry sauce, and wine.
  3. Chill until the mixture thickens slightly.
  4. Fold in chopped pecans.
  5. Chill until the mixture is firm.
  6. In a small bowl, beat cream cheese with sour cream until smooth.
  7. Spread the cream cheese mixture over the gelatin layer.
  8. Keep chilled until serving.
  9. Cut into squares and serve.
