Ingredients

  • 1 (8-inch) pie shell or graham cracker crust
  • 1 (20 oz.) can juice packed crushed pineapple
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 cup sugar
  • 1 cup heavy cream

Instructions

  1. Drain the crushed pineapple, reserving the juice.
  2. Thoroughly beat the cream cheese with the sugar and 2 tablespoons of the reserved pineapple juice.
  3. Beat in the crushed pineapple until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture.
  6. Fill the pie shell with the mixture.
  7. Refrigerate thoroughly before serving.
