Ingredients

  • 1 (No. 2) can crushed pineapple, drained
  • 1 1/2 cups miniature marshmallows
  • 1 (3 oz.) package jello (orange or citrus flavor)
  • 2 cups whipped topping
  • 1 cup cottage cheese
  • 1/2 cup chopped nuts

Instructions

  1. Drain juice from crushed pineapple; add enough water to make 1 cup liquid.
  2. Combine pineapple juice, marshmallows, and jello in a saucepan.
  3. Heat until marshmallows dissolve completely.
  4. Cool until almost set; then fold in whipped topping.
  5. Add chopped nuts, pineapple, and cottage cheese to the mixture.
  6. Pour into a 1-quart mold, bowl, or 9 x 9-inch pan.
  7. Refrigerate until ready to serve.
