Pineapple Fingers are a luscious dessert combining the tropical flavors of pineapple and coconut with a tender cake base, perfect for sweet gatherings and tropical-themed parties.

Ingredients

  • 1 pkg yellow cake mix
  • 2 eggs
  • 3 Tbsp melted butter
  • 1 tsp vanilla flavoring
  • 2/3 cup sugar
  • 1/2 cup coconut
  • 1 small can crushed pineapple

Instructions

  1. Drain the crushed pineapple.
  2. Mix the cake mix, egg yolks, melted butter, and vanilla flavoring until well combined.
  3. Press the cake mixture into a 9 x 13-inch baking pan.
  4. Beat the egg whites until stiff, then gradually add sugar and continue beating.
  5. Fold in the coconut and crushed pineapple into the egg whites mixture.
  6. Pour the pineapple-coconut mixture over the cake base in the pan.
  7. Bake at 325°F for 30 minutes.
  8. Allow to cool thoroughly.
  9. Cut into finger strips and serve.
