Pineapple Graham Cracker Pie

Ingredients

  • 8 oz. can pineapple
  • 12 marshmallows
  • 2 Tbsp. strawberry jello powder
  • 1/2 pint cream
  • 2 Tbsp. powdered sugar
  • 1 1/3 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup butter or margarine

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and sugar, then stir in melted butter.
  2. Press the mixture into a 9-inch pie plate and bake at 375°F for about 8 minutes.
  3. Heat the pineapple and add marshmallows, stirring until melted.
  4. Add 2 tablespoons of strawberry jello powder to the pineapple mixture and stir until dissolved.
  5. Allow the mixture to cool until it begins to stiffen.
  6. In the meantime, whip the cream with 2 tablespoons of powdered sugar until soft peaks form.
  7. Once the pineapple mixture has cooled and thickened, fold in the whipped cream.
  8. Pour the filling into the prepared graham cracker crust.
  9. Refrigerate until set before serving.
