Ingredients

  • 1 1/4 cups milk
  • 1 1/2 cups All-Bran
  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt (optional)
  • 3 teaspoons baking powder
  • 1 beaten egg
  • 1/4 cup salad oil
  • 1/4 cup chopped pecans, dusted with 1/2 teaspoon flour
  • 1/2 cup well-drained pineapple

Instructions

  1. Combine milk and All-Bran in a large bowl and let set for 5 minutes.
  2. Sift together flour, sugar, salt (if using), and baking powder.
  3. Add the beaten egg, salad oil, and dry ingredients to the milk and bran mixture.
  4. Mix only until all ingredients are moist; the batter should be lumpy.
  5. Stir in the chopped pecans (dusted with flour) and well-drained pineapple.
  6. Fill greased muffin tins 2/3 full.
  7. Bake at 400°F for 20 to 25 minutes.
