Ingredients

  • 1/2 cup sugar
  • 1 large can (20 oz.) crushed pineapple, strained
  • 3 tablespoons pineapple juice
  • 1 stick melted butter
  • 1 cup grated sharp Cheddar cheese
  • 1 stack Ritz crackers, crumbled

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 1-quart casserole dish with a light film of melted butter.
  3. Mix the flour and sugar in a bowl.
  4. Add pineapple juice and mix well.
  5. Stir in the strained crushed pineapple.
  6. Add grated sharp Cheddar cheese and mix thoroughly.
  7. Pour the pineapple mixture into the prepared casserole dish.
  8. In a separate bowl, combine the crumbled Ritz crackers with melted butter.
  9. Spread the cracker mixture evenly over the pineapple mixture.
  10. Bake for 30 to 35 minutes until bubbly and golden.
