Ingredients

  • 6 egg whites
  • 2 cups fine granulated sugar
  • 1 teaspoon baking powder
  • 56 crushed low-fat Ritz crackers
  • 1 1/2 cups ground walnuts
  • 2 packages Dream Whip
  • 1 teaspoon vanilla
  • 8 ounces softened cream cheese
  • 20 ounces can crushed pineapple, drained

Instructions

  1. Beat egg whites until stiff peaks form.
  2. Gradually add sugar, baking powder, crushed Ritz crackers, and ground nuts to the egg whites and fold gently.
  3. Pour the mixture into a greased 9 x 13-inch pan and bake at 350°F for 30 minutes.
  4. Prepare Dream Whip according to package instructions, using skim milk if desired.
  5. Blend the prepared Dream Whip with vanilla, softened cream cheese, and drained crushed pineapple until smooth.
  6. Spread the pineapple mixture evenly over the cooled crumb crust.
  7. Refrigerate for at least one hour before serving.
