Ingredients

  • 1/4 cup butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup pineapple sauce
  • 3 to 4 pineapple slices, drained
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1/4 cup pineapple sauce

Instructions

  1. Preheat oven to 375°F.
  2. Line the bottom of an 8-inch round cake pan with parchment or waxed paper.
  3. Combine melted butter, brown sugar, and 1/4 cup pineapple sauce in a bowl.
  4. Pour the mixture into the prepared cake pan.
  5. Arrange pineapple slices over the mixture in the pan.
  6. Set aside.
  7. In a separate bowl, sift together flour, baking powder, and salt.
  8. In a large mixing bowl, cream softened butter and sugar with an electric mixer.
  9. Add eggs one at a time, beating well after each addition.
  10. Add the flour mixture and beat on low speed until well combined.
  11. Stir in the remaining pineapple sauce and shredded Gouda cheese.
  12. Pour the batter over the pineapple slices in the cake pan.
  13. Bake for 30 to 35 minutes.
  14. Cool for 10 minutes.
  15. Carefully invert the cake onto a serving platter.
  16. Remove the pan and paper.
  17. Serve warm, optionally with whipped cream.
