Ingredients

  • 7 maraschino cherries
  • 1 (1 lb. 4 oz.) can crushed pineapple
  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 1 (16 to 17 oz.) package pound cake mix
  • 1 teaspoon vanilla
  • 1 teaspoon lemon peel

Instructions

  1. Place maraschino cherries in the large flutes of a greased Bundt pan.
  2. Drain the crushed pineapple, reserving the syrup.
  3. Combine 1/2 cup of drained pineapple, brown sugar, melted butter, and 3 tablespoons of pineapple syrup; spoon this mixture into the Bundt pan on top of the cherries.
  4. Prepare the pound cake mix according to package directions, using pineapple syrup for the liquid.
  5. Stir in lemon peel, vanilla, and the remaining crushed pineapple into the batter.
  6. Spoon the batter into the prepared pan.
  7. Bake at 325°F (160°C) for 60 to 65 minutes.
  8. Cool in the pan for 5 minutes.
  9. Turn out onto a wire rack or serving plate to complete cooling.
