Ingredients

  • 2 3/4 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon mace
  • 1 1/2 cups egg nog
  • 1/4 cup butter, melted
  • 1 egg
  • 1 tablespoon rum
  • 3/4 cup chopped pecans
  • 3/4 cup mixed candied fruit

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9 x 5-inch loaf pan or two smaller loaf pans with cooking spray.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and mace.
  3. Stir in the eggnog, melted butter, egg, and rum until just combined.
  4. Fold in the chopped pecans and mixed candied fruit.
  5. Pour the batter into the prepared pans.
  6. Bake for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
