A delightful layered pink cake featuring a soft sponge base, sweet jam filling, and a charming pink blancmange icing, perfect for celebrations and special occasions.

Ingredients

  • 1 cup self-rising flour
  • 1 cup pink blancmange or pudding powder
  • 1/4 cup sugar
  • 2 oz margarine
  • 2 dried eggs reconstituted in milk

Instructions

  1. Beat sugar and margarine together until well combined.
  2. Mix self-rising flour and pink blancmange or pudding powder together.
  3. Add eggs reconstituted in milk and alternate adding the flour mixture to the creamed sugar and margarine.
  4. Beat well then divide the batter into two greased sandwich tins.
  5. Bake in the oven at the appropriate temperature for 20 minutes or until a skewer inserted comes out clean.
  6. Allow the cakes to cool completely.
  7. Spread a layer of jam between the two cake layers.
  8. To prepare the icing, boil together 2 tablespoons sugar, 2 tablespoons water, and a small piece of margarine.
  9. Allow the icing to cool slightly, then beat in sufficient pink blancmange powder to achieve the desired color and consistency.
  10. Spread the icing over the assembled cake.
