Pink Layer Party Cake

- Beat sugar and margarine together until well combined.
- Mix self-rising flour and pink blancmange or pudding powder together.
- Add eggs reconstituted in milk and alternate adding the flour mixture to the creamed sugar and margarine.
- Beat well then divide the batter into two greased sandwich tins.
- Bake in the oven at the appropriate temperature for 20 minutes or until a skewer inserted comes out clean.
- Allow the cakes to cool completely.
- Spread a layer of jam between the two cake layers.
- To prepare the icing, boil together 2 tablespoons sugar, 2 tablespoons water, and a small piece of margarine.
- Allow the icing to cool slightly, then beat in sufficient pink blancmange powder to achieve the desired color and consistency.
- Spread the icing over the assembled cake.
