Ingredients

  • 1/2 cup cornmeal
  • 2 cups boiling water
  • 1 teaspoon salt
  • 2 packets dry active yeast
  • 1 tablespoon sugar
  • 1/2 cup warm water
  • 1 cup milk
  • 2 tablespoons salt
  • 1/4 cup brown sugar
  • 4 tablespoons Crisco

Instructions

  1. Pour cornmeal slowly into boiling water with 1 teaspoon salt. Stir until it cooks thick.
  2. Pour into a large bowl to cool.
  3. Dissolve yeast in 1/2 cup warm water with 1 tablespoon sugar.
  4. Add milk, shortening, brown sugar, and salt to the cooled cornmeal mixture.
  5. Add yeast mixture and 2 cups of flour.
  6. Mix until smooth.
  7. Add enough flour until the dough can be taken out and kneaded on a floured surface.
  8. Knead until smooth and elastic, about 10 minutes.
  9. Place dough in a large greased bowl.
  10. Cover; let rise until double in bulk.
  11. Punch down and turn out onto a floured surface.
  12. Cut into 3 pieces; shape into loaves.
  13. Let rise until almost double in bulk.
  14. Bake at 425°F for 25 to 30 minutes until bread is nicely browned.
