Ingredients

  • 10 oz. frozen yellow squash
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 medium onion
  • vegetable oil

Instructions

  1. Cook squash according to package directions; drain well.
  2. Mash squash and add beaten egg; stir well.
  3. Combine flour, cornmeal, baking powder, and salt; stir well.
  4. Add squash mixture and chopped onion; stir.
  5. Drop squash mixture by heaping tablespoonfuls into hot vegetable oil.
  6. Cook until golden brown.
  7. Turn and flatten patties.
  8. Drain on paper towels.
