  • 3 Tbsp. sugar
  • 1 1/2 c. flour
  • 1 8 oz. cream cheese
  • 3/4 c. powdered sugar
  • 1 tub cool whip
  • 2 small pkg. pistachio instant pudding mix
  • 2 1/2 c. milk
  • 1/2 c. chopped nuts

Instructions

  1. Preheat oven to 375°F.
  2. Mix melted margarine, 3 Tbsp. sugar, and flour; press into a 9x13 inch cake pan and bake for 15 minutes.
  3. In a bowl, beat cream cheese, powdered sugar, and half of the cool whip until smooth.
  4. Spread the cream cheese mixture evenly over the cooled crust.
  5. In a separate bowl, mix pudding mix with milk until set, then spread over the cream cheese layer.
  6. Spread the remaining cool whip over the pudding layer.
  7. Sprinkle chopped nuts on top, if desired.

Tips & Substitutions

To enhance the flavor, consider adding a splash of vanilla extract to the cream cheese mixture. For a lighter option, you can substitute the margarine with coconut oil. If you're looking for a nut-free version, simply omit the chopped nuts on top. Ensure the pudding is well-set before layering to avoid any slippage. For an extra crunch, try using roasted pistachios.

Serving Suggestions

These pistachio bars are delightful served chilled and can be paired with a cup of coffee or tea for a sweet afternoon treat. They also make a stunning dessert for gatherings and potlucks. For a fun twist, serve them alongside Ollie'S Key Lime-Chocolate Pie(In Honor Of "Abercrombie") for a refreshing contrast of flavors.

Storage & Reheating

Store any leftover pistachio bars in an airtight container in the refrigerator for up to 5 days. To maintain the texture, avoid freezing, as the cream cheese layer may separate upon thawing. When ready to serve, simply slice and enjoy cold straight from the fridge.

Frequently Asked Questions

Can I use a different flavor of pudding mix?

Absolutely! While pistachio is traditional, you can experiment with flavors like vanilla or chocolate pudding for a different taste. Just ensure that the milk measurement remains the same, and adjust the toppings according to your chosen flavor.

Is there a way to make these bars gluten-free?

Yes, you can substitute the all-purpose flour with a gluten-free flour blend. Make sure it’s a 1:1 substitute to maintain the texture. Additionally, check that your margarine and pudding mix are gluten-free, as some processed products may contain gluten.

How can I make these bars more aesthetically pleasing?

For a visually appealing presentation, consider drizzling melted chocolate over the top before adding the chopped nuts. You can also garnish with fresh mint leaves or additional crushed pistachios to elevate the look of your dessert.
