Ingredients

  • 1 pkg yeast
  • 1/3 cup melted butter
  • 3 3/4 cups flour
  • 1/4 cup lukewarm water
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 cup scalded milk
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup ground nuts

Instructions

  1. Dissolve the yeast in the lukewarm water.
  2. Add 1/3 cup sugar, melted butter, and salt to the scalded milk.
  3. When cooled to lukewarm, add the dissolved yeast, beaten eggs, and enough flour to make a stiff batter.
  4. Cover and let rise until the mixture doubles in bulk.
  5. Knead down the dough and let rise again.
  6. Roll small balls of dough about the size of walnuts and dip them in melted butter.
  7. Roll each ball in a mixture of 3/4 cup sugar, ground nuts, and cinnamon.
  8. Pile the balls loosely in an ungreased angel food cake pan and let rise for about 30 minutes.
  9. Bake for about 40 minutes at 400°F, then 10 minutes at 350°F until brown.

Tips & Substitutions

For a richer flavor, consider using browned butter instead of just melted butter. If you’re short on time, you can use pre-made dough instead of making your own. Ensure the milk is scalded properly to activate the yeast effectively. If you prefer a nut-free version, substitute ground nuts with additional sugar or a sprinkle of cinnamon. These Pluckets will also taste great with a drizzle of honey on top.

Serving Suggestions

Serve Pluckets warm, perhaps with a side of cream cheese frosting for dipping or spread. They pair beautifully with a hot cup of coffee or tea. For a delightful breakfast treat, they can be enjoyed alongside Ivy'S Buttermilk Pancakes or as a sweet addition to a brunch spread. Consider garnishing with a dusting of powdered sugar or a drizzle of maple syrup.

Storage & Reheating

Store leftover Pluckets in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate them for up to a week. To reheat, place them in a preheated oven at 350°F for about 10 minutes to revive their texture. Alternatively, microwave them for a few seconds, but be cautious not to make them too chewy.

Frequently Asked Questions

Can I use instant yeast instead of active dry yeast?

Yes, you can substitute instant yeast for active dry yeast in this recipe. Use the same amount and skip the step of dissolving it in water; simply mix it directly with the dry ingredients. This can save time and yield a quicker rise.

What can I use instead of ground nuts?

If you're allergic to nuts or prefer not to use them, you can replace ground nuts with additional sugar or a mixture of oats and cinnamon for added texture. Alternatively, consider using crushed cookies for a different flavor profile.

How do I know when the dough has risen enough?

The dough is ready when it has doubled in size and is puffy to the touch. A good test is to gently poke the dough; if the indentation remains, it’s ready for the next step. This ensures the yeast has activated properly.
