Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 2/3 cups flour
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/3 cup water
  • 1 cup cooked pumpkin mashed

Instructions

  1. Preheat oven to 350°F.
  2. Grease a loaf pan well.
  3. Combine sugar and vegetable oil in a large mixing bowl.
  4. Add eggs and beat well.
  5. Sift dry ingredients (flour, cinnamon, salt, nutmeg, baking soda) together.
  6. Add dry ingredients alternately with water to the mixing bowl, mixing after each addition.
  7. Add cooked pumpkin and nuts to the batter and mix well.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes or until the loaf tests done.
  10. Cool before slicing.
