Ingredients

  • 1 c. white vinegar
  • 1 (16 oz.) jar pickled beets
  • 2 or 3 cloves garlic
  • 1 bay leaf
  • 2 tsp. mixed pickling spices
  • 1/2 tsp. salt
  • 12 hard-boiled eggs
  • 1 medium onion

Instructions

  1. In a large bowl, combine the pickled beets and their juice with the vinegar, water, garlic, bay leaf, pickling spices, and salt.
  2. Add the hard-boiled eggs and onion slices to the mixture.
  3. Cover and refrigerate for several days before serving.
