Ingredients

  • 1/2 lb butter
  • 5 large eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1/2 cup coarsely chopped walnuts
  • 1 tsp salt
  • 1 lb confectioners sugar
  • 1 tsp vanilla extract
  • 3 cups flour
  • 6 oz maraschino cherries
  • 1/2 cup shredded coconut

Instructions

  1. Cream the butter well.
  2. Gradually work in the confectioners sugar.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add vanilla extract.
  5. Alternately add milk and the mixture of flour and baking powder, starting and ending with the flour mixture.
  6. Fold in the cherries, shredded coconut, and chopped walnuts.
  7. Pour the batter into a greased and floured tube pan.
  8. Bake at 350°F (175°C) for 1 hour.
  9. Allow the cake to cool, then dust with confectioners sugar.
