Ingredients

  • 1 whole chicken
  • 1 cup olive oil
  • 2 cloves garlic
  • parsley
  • 1 cup white wine
  • 2 whole tomatoes
  • 1/4 pound flour
  • 1 teaspoon butter
  • 1 sprig rosemary
  • 1 can anchovies
  • 1 ounce capers

Instructions

  1. Cut the chicken into pieces and dry them.
  2. Flour the chicken pieces and cook until golden in a pan with olive oil, butter, and garlic.
  3. Add crushed rosemary, parsley, and anchovies to the pan.
  4. Gradually add the white wine and cook until the chicken is almost done.
  5. Cover the chicken with capers and chopped tomatoes and cook until heated through.
  6. Serve hot with a side dish of boiled potatoes.
