Ingredients
- 1 1/2 lb. round steak ⓘ
- 1/4 c. chopped onion ⓘ
- 1/4 c. ground pork ⓘ
- 1/4 c. bread crumbs ⓘ
- 1/4 c. grated Romano cheese ⓘ
- 1 bunch parsley ⓘ
- 1/2 c. chopped spinach ⓘ
- cold cuts (salami, ham) ⓘ
- cheese, cubed (Cheddar, Provolone)
- 1/2 c. chopped peas ⓘ
- 3 hard-cooked eggs ⓘ
- 2 Tbsp. extra virgin olive oil ⓘ
- 1 c. chicken broth ⓘ
- 3 Tbsp. tomato paste ⓘ
- 1/2 c. dry red wine ⓘ
Instructions
- Place the pounded round steak on wax paper.
- Spread chopped onion, ground pork, bread crumbs, Romano cheese, parsley, spinach, cold cuts, cheese, peas, and sliced eggs evenly over the steak, leaving space around edges for rolling.
- Carefully roll up the steak tightly and tie with kitchen string to secure.
- Heat olive oil in a large skillet and brown the rolled beef on all sides.
- Add chicken broth, tomato paste, and red wine to the skillet.
- Reduce heat and simmer uncovered for about 35 minutes until the beef is cooked through and flavors meld.
