Ingredients

  • 1 1/2 lb. round steak
  • 1/4 c. chopped onion
  • 1/4 c. ground pork
  • 1/4 c. bread crumbs
  • 1/4 c. grated Romano cheese
  • 1 bunch parsley
  • 1/2 c. chopped spinach
  • cold cuts (salami, ham)
  • cheese, cubed (Cheddar, Provolone)
  • 1/2 c. chopped peas
  • 3 hard-cooked eggs
  • 2 Tbsp. extra virgin olive oil
  • 1 c. chicken broth
  • 3 Tbsp. tomato paste
  • 1/2 c. dry red wine

Instructions

  1. Place the pounded round steak on wax paper.
  2. Spread chopped onion, ground pork, bread crumbs, Romano cheese, parsley, spinach, cold cuts, cheese, peas, and sliced eggs evenly over the steak, leaving space around edges for rolling.
  3. Carefully roll up the steak tightly and tie with kitchen string to secure.
  4. Heat olive oil in a large skillet and brown the rolled beef on all sides.
  5. Add chicken broth, tomato paste, and red wine to the skillet.
  6. Reduce heat and simmer uncovered for about 35 minutes until the beef is cooked through and flavors meld.
