Ingredients

  • 6 egg yolks
  • 3 Tbsp. sugar
  • 1 oz. brandy
  • 1/4 tsp. cream of tartar
  • 1 c. flour
  • powdered sugar
  • deep fat (for frying; try peanut oil)

Instructions

  1. Beat egg yolks until lemon-colored.
  2. Add sugar one tablespoon at a time and beat well.
  3. Add brandy and cream of tartar, then beat well.
  4. Add flour until the dough doesn't stick to hands.
  5. Roll the dough very thin and cut into pieces 3 x 1 inches.
  6. Slit each piece in the center and pull one end through the slit.
  7. Fry in hot oil until lightly brown, turning once.
  8. Drain on paper towels and sprinkle with powdered sugar.

Tips & Substitutions

For a lighter texture, ensure the oil is at the right temperature before frying; too cool and the krusciki will absorb more oil. If you don't have brandy, you can substitute with rum or even vanilla extract for a different flavor. Make sure to roll the dough as thin as possible for crispy results. Dust with powdered sugar right before serving to maintain its freshness.

Serving Suggestions

Polskie Krusciki are delightful on their own, but you can serve them with a side of fresh fruit or a dollop of whipped cream for added indulgence. They make a wonderful dessert alongside a Rich Cranberry Shake or can be enjoyed with a cup of coffee or tea for a delightful afternoon treat.

Storage & Reheating

Store leftover krusciki in an airtight container at room temperature for up to 2 days. For longer storage, you can freeze them in a single layer and then transfer to a freezer bag. Reheat in a warm oven for a few minutes to restore their crispness before serving.

Frequently Asked Questions

Can I make the dough ahead of time?

Yes, you can prepare the dough ahead of time and refrigerate it for up to 24 hours. Just let it come to room temperature before rolling it out. This can save time on the day you plan to fry them.

What type of oil is best for frying krusciki?

Peanut oil is a great choice due to its high smoke point and neutral flavor. However, you can also use canola oil or vegetable oil if that's what you have on hand. Just ensure the oil is hot enough before frying.

How can I make these krusciki gluten-free?

To make gluten-free krusciki, substitute the all-purpose flour with a gluten-free flour blend. Make sure to choose a blend that includes xanthan gum, which helps with the texture. The results should still be deliciously crispy!
