Ingredients

  • 1 cup long grain rice
  • 1/2 cup salad oil
  • 1/4 cup cider vinegar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1 cup thinly sliced celery
  • 1/4 cup thinly sliced green onion
  • 1 (8 1/2 oz.) can sliced water chestnuts
  • 1 cup fresh mushrooms
  • 1 (11 oz.) can mandarin oranges

Instructions

  1. Cook the rice and allow it to cool to room temperature.
  2. Combine salad oil, cider vinegar, soy sauce, salt, sliced celery, and sliced green onion in a bowl.
  3. Stir the cooled rice into the salad dressing mixture.
  4. Gently fold in sliced water chestnuts, fresh mushrooms, and mandarin oranges until just blended.
  5. Chill the salad thoroughly before serving.
