Ingredients

  • 6 large ripe tomatoes
  • 1/2 cup cooked rice
  • 4 tablespoons fresh parsley chopped
  • 2 teaspoons dried basil
  • 1 large clove garlic chopped
  • 1/2 teaspoon salt
  • 1/4 cup olive oil

Instructions

  1. Cut off tops of tomatoes and scoop out the pulp.
  2. Place pulp in a sieve and squeeze out the juices.
  3. Reserve the juice and discard the pulp.
  4. Combine cooked rice, chopped parsley, dried basil, chopped garlic, and salt in a bowl.
  5. Add enough reserved juice to the rice mixture to moisten it.
  6. Spoon the rice mixture back into the hollowed tomatoes.
  7. Pour remaining juice over the filled tomatoes.
  8. Place tomatoes on a greased pan with half of the olive oil.
  9. Replace the tomato tops and drizzle the remaining olive oil over the tomatoes.
  10. Bake in a preheated 375°F oven for 30 minutes, then reduce temperature to 350°F and bake for another 30 minutes.
