Ingredients

  • 2 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/4 teaspoon vanilla
  • 4 tablespoons margarine
  • 1 1/2 cups sifted confectioners sugar
  • 2 tablespoons crushed fresh strawberries

Instructions

  1. Beat egg whites, cream of tartar, and salt in a large bowl until foamy.
  2. Gradually add sugar, one tablespoon at a time, beating well after each addition until stiff peaks form.
  3. Beat in vanilla extract.
  4. Drop tiny mounds, about 1 teaspoonful each, onto buttered cookie sheets, spacing them 1 inch apart.
  5. Bake in a very slow oven at 250°F (120°C) for about 30 minutes until crisp and delicately golden.
  6. Remove from oven and cookie sheets; lightly press in the bottom of each meringue.
  7. Cool on wire racks.
  8. Cream margarine until soft, then gradually beat in confectioners sugar and crushed strawberries until thick and fluffy.
  9. Fill each meringue with strawberry cream, pressing two together to form a pink layer between.
