- Beat egg whites, cream of tartar, and salt in a large bowl until foamy.
- Gradually add sugar, one tablespoon at a time, beating well after each addition until stiff peaks form.
- Beat in vanilla extract.
- Drop tiny mounds, about 1 teaspoonful each, onto buttered cookie sheets, spacing them 1 inch apart.
- Bake in a very slow oven at 250°F (120°C) for about 30 minutes until crisp and delicately golden.
- Remove from oven and cookie sheets; lightly press in the bottom of each meringue.
- Cool on wire racks.
- Cream margarine until soft, then gradually beat in confectioners sugar and crushed strawberries until thick and fluffy.
- Fill each meringue with strawberry cream, pressing two together to form a pink layer between.
