Ingredients

  • 3 cups applesauce
  • 3 cups sugar
  • 1 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup margarine
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 3 cups pecans
  • 1 cup raisins
  • 1 large jar maraschino cherries
  • 3 1/2 cups self-rising flour
  • 2 eggs

Instructions

  1. Heat applesauce and margarine in a saucepan until warmed.
  2. Add ground cloves, cinnamon, and nutmeg to the mixture and stir.
  3. In a large bowl, beat eggs and sugar together until well combined.
  4. Gradually add the self-rising flour to the egg mixture, one cup at a time, mixing well after each addition.
  5. Stir in the heated applesauce and margarine mixture.
  6. Add the coconut, pecans, raisins, and diced maraschino cherries to the batter and mix thoroughly.
  7. Pour the batter into a greased tube pan.
  8. Bake in a preheated oven at 300°F (150°C) for approximately 3 hours, or until a toothpick inserted in the center comes out clean.
