Ingredients

  • 2 lb. short ribs
  • 2 lb. beef stew meat
  • 6 white potatoes
  • 4 stalks celery
  • 1 large onion
  • 1 tsp. oregano
  • 1 (12 oz.) can tomato paste
  • 1 can whole tomatoes
  • leftover vegetables (such as peas, beans, cabbage, etc.)

Instructions

  1. Cook short ribs and beef stew meat together until tender.
  2. Add chopped onion, celery, and oregano to the meat and cook until vegetables are soft.
  3. Stir in tomato paste and canned whole tomatoes, and cook for a few more minutes.
  4. Add peeled and chopped white potatoes to the pot.
  5. Include any leftover vegetables from the refrigerator, such as peas, beans, or cabbage.
  6. Heat thoroughly until all ingredients are well combined and hot.
  7. Serve the soup hot, optionally with cornbread.
