Ingredients
- 4 tsp. oil ⓘ
- 1 c. diced celery ⓘ
- 1 large diced onion ⓘ
- 2 c. cooked brown rice ⓘ
- 16 oz. 93% fat-free ground turkey
- 2 heaping tsp. instant beef bouillon ⓘ
- 2 Tbsp. Worcestershire sauce ⓘ
- 3/4 c. V-8 picante ⓘ
- 1/2 tsp. spicy pepper
- 1/2 tsp. salt-free garlic and herb ⓘ
- 4 large green peppers ⓘ
- 8 tomato slices ⓘ
- 8 tsp. grated Cheddar ⓘ
Instructions
- Saute ground turkey, diced onion, and diced celery in oil in nonstick frypans sprayed with Pam.
- Add cooked brown rice, spices, beef bouillon, V-8 picante, and Worcestershire sauce to the turkey mixture.
- Mix well until all ingredients are combined.
- Spoon the mixture into halved green peppers.
- Top each pepper with a tomato slice and 1 teaspoon grated Cheddar cheese.
- Place the stuffed peppers in a baking dish, cover, and bake at 350°F for 1 hour.
