Ingredients

  • 4 tsp. oil
  • 1 c. diced celery
  • 1 large diced onion
  • 2 c. cooked brown rice
  • 16 oz. 93% fat-free ground turkey
  • 2 heaping tsp. instant beef bouillon
  • 2 Tbsp. Worcestershire sauce
  • 3/4 c. V-8 picante
  • 1/2 tsp. spicy pepper
  • 1/2 tsp. salt-free garlic and herb
  • 4 large green peppers
  • 8 tomato slices
  • 8 tsp. grated Cheddar

Instructions

  1. Saute ground turkey, diced onion, and diced celery in oil in nonstick frypans sprayed with Pam.
  2. Add cooked brown rice, spices, beef bouillon, V-8 picante, and Worcestershire sauce to the turkey mixture.
  3. Mix well until all ingredients are combined.
  4. Spoon the mixture into halved green peppers.
  5. Top each pepper with a tomato slice and 1 teaspoon grated Cheddar cheese.
  6. Place the stuffed peppers in a baking dish, cover, and bake at 350°F for 1 hour.
