Ingredients

  • 1 whole chicken
  • 1 lb chopped meat
  • 2 tsp nutmeg
  • 2 tsp pepper
  • 12 chicken bouillon cubes

  • 6 carrots
  • 1 bundle scallions
  • 1 bundle parsley

Instructions

  1. Put the whole chicken in a soup pot and cover with water.
  2. Add 12 chicken bouillon cubes, 1 teaspoon pepper, and 1 teaspoon nutmeg.
  3. Cook for 1 hour or until the chicken pulls away from the bones.
  4. Remove the chicken, de-skin and debone it, then set aside.
  5. Make meatballs about 1-inch in diameter using chopped meat, 1 teaspoon pepper, and 1 teaspoon nutmeg; mix well and form into balls.
  6. Add the meatballs into the broth and cook.
  7. Chop the celery stalks, carrots, scallions, and parsley.
  8. Add the chopped vegetables to the broth.
  9. Put the cooked chicken into the broth.
  10. Add noodles to the soup.
  11. Cook until the noodles are done and the vegetables are soft.
