Ingredients

  • 1 lb. fresh spinach, finely chopped
  • 1 tsp. grated onion
  • 1/2 tsp. salt
  • 4 slices bacon, finely chopped
  • 1/4 c. malt vinegar
  • 2 tsp. sugar
  • 2 hard-boiled eggs, finely chopped

Instructions

  1. Combine chopped spinach, grated onion, and salt in a salad bowl; mix well.
  2. Saute chopped bacon in a skillet until crisp.
  3. Stir in malt vinegar and sugar into the bacon; pour over the spinach mixture.
  4. Sprinkle with chopped hard-boiled eggs and toss lightly to combine.
