Ingredients

  • 10 lb. pork chitterlings
  • 2 tsp. red pepper
  • 1 large onion
  • 3 Tbsp. vinegar
  • salt and pepper to taste

Instructions

  1. Wash chitterlings thoroughly.
  2. Remove some fat if there are dark spots on fat, but leave some fat on the chitterlings.
  3. Place chitterlings into a large pot.
  4. Add water to the pot.
  5. Season with vinegar, salt, red pepper, and chopped onion.
  6. Cook for 4 hours over very low heat.
  7. Serve with collard greens and hot sauce.
