Ingredients

  • 4 pork chops
  • 1 cup cooked rice
  • 1 cup chopped celery
  • 1 quart canned tomatoes with 1 tablespoon sugar added
  • 4 thick slices onion, preferably Vidalia
  • 1 green bell pepper, seeds removed and cut into strips or rings

Instructions

  1. Salt and pepper the pork chops to taste.
  2. Cook the pork chops quickly in a lightly greased skillet without flour until browned.
  3. Layer the ingredients in the skillet in the following order: pork chops, onion slices, bell pepper strips or rings, chopped celery, cooked rice, and canned tomatoes with sugar.
  4. Put the lid on the skillet and simmer for 35 minutes.
