Ingredients

  • 1 boneless pork loin (about 3 lb.)
  • 1/2 tsp. cinnamon
  • 1/2 tsp. thyme
  • 2 scallions
  • 3/4 cup fresh bread crumbs
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots

Instructions

  1. Preheat oven to 350°F.
  2. Open the pork loin flat on a work surface.
  3. Season with salt and pepper, then rub in cinnamon and thyme.
  4. Combine chopped scallions, bread crumbs, dried cranberries, apricots, golden raisins, and 1/4 cup apple juice in a bowl.
  5. Spread the fruit and bread crumb mixture over the pork.
  6. Roll up the pork loin and tie to secure.
  7. Place the rolled pork in a rack set in a roasting pan and add the remaining apple juice to the pan.
  8. Roast for 35 minutes.
  9. Bring apricot preserves and pan juices to a boil.
  10. Pour the preserves mixture over the pork.
  11. Roast for an additional 15 minutes or until a meat thermometer reads 160°F.
