Ingredients

  • 6 loin pork chops (1/2-inch thick)
  • 1/4 cup olive oil
  • 1 box fresh mushrooms, sliced
  • 1 green pepper
  • 1 large onion, sliced
  • 1 (No. 2) can plum tomatoes
  • salt to taste

Instructions

  1. Brown the pork chops in hot oil on both sides; transfer to a saucepan.
  2. Saute sliced mushrooms and chopped green pepper in remaining oil; spread over the chops.
  3. Saute sliced onion in the same pan.
  4. Add canned plum tomatoes and simmer the mixture for 5 minutes.
  5. Pour the sauce over the pork chops; season with salt and pepper.
  6. Cover tightly and simmer until the chops are tender, about 30 minutes.
  7. Serve immediately.
