Ingredients

  • 4 pork chops, 3/4 to 1 inch thick
  • salt and pepper to taste
  • flour
  • shortening
  • 1 can lima beans
  • 1 Tbsp chopped onion
  • 1 cup whole tomatoes, drained
  • 1/2 tsp sugar

Instructions

  1. Sprinkle the pork chops with salt and pepper.
  2. Coat the chops with flour and brown them on both sides in hot shortening.
  3. Place the lima beans in a casserole dish and sprinkle with chopped onion.
  4. Arrange the browned chops on top of the beans and onions.
  5. Top the chops with drained whole tomatoes.
  6. Sprinkle sugar over the dish.
  7. Bake, covered, at 325°F for 1 1/2 hours until the chops are tender. Use the liquid from the tomatoes if necessary during baking.
