Juicy pork parcels filled with flavorful rice, sweet corn, peas, and green onions, wrapped in foil and baked to perfection—an easy, hearty dish perfect for family dinners.

Ingredients

  • 4 oz. long grain rice
  • 5 oz. frozen sweet corn
  • 5 oz. frozen peas
  • 4 green onions
  • salt
  • pepper
  • 1 Tbsp. soy sauce
  • 4 Tbsp. cider

Instructions

  1. Cook the rice and put it into a bowl.
  2. Cook the corn and peas in boiling salted water for 2 minutes, then drain.
  3. Chop the green onions.
  4. Add the corn, peas, and green onions to the rice and mix well. Season with salt and pepper to taste.
  5. Cut four large squares of aluminum foil.
  6. Place a pork chop on each piece of foil.
  7. Sprinkle each chop well with soy sauce.
  8. Divide the rice mixture equally and place on top of each chop.
  9. Add a spoonful of cider over each parcel.
  10. Wrap each parcel securely into the foil.
  11. Place the parcels on a baking pan and bake in the oven at 350°F (175°C) for 40 minutes.
