Ingredients

  • 8 small slices lean pork or veal
  • salt
  • 3.5 oz flour
  • 2 Tbsp oil
  • 1 lb mushrooms
  • 1 Tbsp grated onion
  • 1 c sour cream
  • 0.5 c heavy cream

Instructions

  1. Salt the meat slices and turn them in the flour.
  2. Heat the oil in a skillet. Add the meat and fry until pink on both sides.
  3. Clean the mushrooms; cut into slices and add to the meat.
  4. Cook, covered, on a medium flame until the meat is done, approximately 15 minutes.
  5. Remove the meat and continue cooking the mushrooms until the liquid evaporates.
  6. Add the heavy cream and half of the sour cream; mix thoroughly.
  7. If the sauce is too thin, add a bit of cornstarch.
  8. Put the meat back in the pan and cook with the mushrooms for a minute or two.
  9. Serve with rice or potatoes, with leftover sour cream in a separate bowl.

Tips & Substitutions

For added flavor, consider marinating the pork in a mixture of garlic and herbs before cooking. If you don't have sour cream, Greek yogurt can serve as a good substitute. For a lighter version, use half-and-half instead of heavy cream. Be careful not to overcook the mushrooms to retain their texture. This dish pairs beautifully with rice or potatoes, making it a versatile option for any meal.

Serving Suggestions

Serve this dish over a bed of rice or alongside buttery mashed potatoes for a comforting meal. A fresh side salad or steamed vegetables would complement the richness of the pork with mushrooms nicely. For an extra touch, offer additional sour cream on the side for those who enjoy a creamier sauce.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a skillet over low heat, adding a splash of water or broth to keep the sauce creamy. Avoid microwaving, as it may toughen the pork and change the texture of the sauce.
