  • 3 garlic cloves minced
  • 1 cup whipping cream
  • 1 cup milk
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 2 tablespoons chopped parsley

Instructions

  1. Remove brown gills from undersides of mushroom caps using a spoon, and discard gills.
  2. Chop mushrooms.
  3. Melt butter in a large saucepan over medium heat; add mushrooms and garlic, and sauté 5 to 6 minutes or until tender.
  4. Stir in cream and milk.
  5. Bring to a boil over medium-high heat; reduce heat, and simmer, whisking constantly, 10 minutes.
  6. Stir in cheese, pepper, and salt; stir constantly until cheese melts and mixture thickens.
  7. Stir in chopped parsley.
  8. Serve over hot cooked pasta.

Tips & Substitutions

For a richer flavor, consider adding a splash of white wine while sautéing the mushrooms. If you don't have whipping cream, half-and-half can be a suitable substitute, though the sauce will be slightly less creamy. Fresh shiitake or cremini mushrooms can also work well in place of portobello if desired. For an extra kick, a pinch of red pepper flakes can enhance the dish.

Serving Suggestions

Serve the Portobello-Alfredo sauce over hot cooked pasta, such as fettuccine or penne, for a hearty meal. It pairs beautifully with a side of Garlic Bread or a fresh green salad. For a complete vegetarian meal, consider serving it alongside Broccoli And Pasta or incorporating sautéed vegetables directly into the sauce.

Storage & Reheating

Store any leftover Portobello-Alfredo sauce in an airtight container in the refrigerator for up to three days. To reheat, gently warm the sauce on the stove over low heat, stirring frequently to prevent separation. If the sauce thickens too much, add a splash of milk or cream to reach desired consistency.

Frequently Asked Questions

Can I use different types of mushrooms in this recipe?

Absolutely! While portobello mushrooms provide a meaty texture, you can substitute with cremini or shiitake mushrooms for a different flavor profile. Just ensure the total weight remains the same for balance.

Is it possible to make this sauce dairy-free?

Yes, you can make a dairy-free version by using coconut cream or a cashew cream as a substitute for the whipping cream and milk. Nutritional yeast can be added to mimic the cheesy flavor of Parmesan.

How can I thicken the sauce if it doesn’t seem thick enough?

If the sauce isn't thickening as desired, continue to simmer it a bit longer while whisking. Alternatively, you can mix a teaspoon of cornstarch with a tablespoon of water to create a slurry, and add it to the sauce while stirring until it thickens.
