  • 3 to 4 potatoes

Instructions

  1. Peel all vegetables.
  2. Dice potatoes into bite-sized pieces and slice carrots.
  3. Slice onions into sections.
  4. Shred cabbage.
  5. Brown sausage lightly in a large pot.
  6. Add onions, cabbage and garlic; continue browning until vegetables are translucent.
  7. Add crushed tomatoes, tomato juice, herbs, potatoes, and carrots to the pot.
  8. Turn heat to low and simmer the soup for at least two hours, or all day if desired.
  9. Cook pasta al dente separately and add to the soup right before serving.
