Turtle Sauce Picante

Ingredients
- 1 stick butter or oleo ⓘ
- 1 large onion, chopped ⓘ
- 1 medium bell pepper, chopped ⓘ
- 2 garlic cloves, chopped
- 1 bunch green onions, chopped ⓘ
- 2 stalks celery
- 1 can Ro-Tel tomatoes ⓘ
- 1 large tomato paste ⓘ
- 2 cans water ⓘ
- 1 smoked sausage link (optional) ⓘ
- 1 medium turtle, cut up ⓘ
- Accent ⓘ
- Creole seasoning ⓘ
- cayenne pepper ⓘ
- Worcestershire sauce
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped onion, bell pepper, garlic, celery, and green onions to the pot.
- Stir constantly until all vegetables are wilted, about 20 minutes.
- Add Ro-Tel tomatoes, tomato paste, and 2 cans of water to the pot.
- Cook over low heat for 40 minutes.
- Optional: add smoked sausage link sliced into pieces.
- Mix all dry seasonings into the tomato gravy.
- Add the cut-up turtle to the pot and cover.
- Do not stir again until ready to serve.
- Let cook on low heat for 1 1/2 hours.
- Serve over rice.
