Ingredients

  • 1 stick butter or oleo
  • 1 large onion, chopped
  • 1 medium bell pepper, chopped
  • 2 garlic cloves, chopped
  • 1 bunch green onions, chopped
  • 2 stalks celery
  • 1 can Ro-Tel tomatoes
  • 1 large tomato paste
  • 2 cans water
  • 1 smoked sausage link (optional)
  • 1 medium turtle, cut up
  • Accent
  • Creole seasoning
  • cayenne pepper
  • Worcestershire sauce

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion, bell pepper, garlic, celery, and green onions to the pot.
  3. Stir constantly until all vegetables are wilted, about 20 minutes.
  4. Add Ro-Tel tomatoes, tomato paste, and 2 cans of water to the pot.
  5. Cook over low heat for 40 minutes.
  6. Optional: add smoked sausage link sliced into pieces.
  7. Mix all dry seasonings into the tomato gravy.
  8. Add the cut-up turtle to the pot and cover.
  9. Do not stir again until ready to serve.
  10. Let cook on low heat for 1 1/2 hours.
  11. Serve over rice.
